Things I’m Pretty Sure About Food

Hello Eaters—

I had a fun culinary experience this week.

I went to see Alton Brown live during “An Evening with Alton Brown.” Anyone who knows my cooking journey knows it really started with me watching Good Eats. Alton Brown has always been sort of a culinary compass for me.

At one point, he went through his list:
“10 things I’m pretty sure I’m sure about food.”

He talked about how it had changed over the years. Some things added, some things removed, some things rewritten entirely.

He only made it through three.
And of course, they were funny and accompanied by a story or some wild demonstration.

It got me thinking—not about his list, but mine.

What am I sure about in the kitchen?
What are my constants?

Not rules.
Not recipes.
Just the things I’ve come to believe about food from my own kitchen, my own table, and the meals that have stayed with me over the years.

So I’m going to start building my own list.
Not all at once.
Not perfectly.



Just… as I go.

Because if there’s one thing I am pretty sure about food—

it’s that the best parts of it usually aren’t planned.
